You see, in Italy a pizza shop must cook it's Pizza in a wood burning oven. Or hang a going out of business sign on the door.
Now at Edgardo's Trattoria, we DO cook our pizzas the Italian way! Our wood burning oven was made in Europe then shipped in pieces to America where it was re-assembled at our restaurant, a job that took over a week!
Like the pizza ovens in Italy, our oven has no thermostat outside to control the temperture inside. It is a conventional wood burning oven -- just like those you'll find in Italy!
